Step preview

  1. Line 2 clean baking sheets with parchment paper
  2. Add plain flour, ground ginger, ground cinnamon and ground cloves to a clean medium bowl
  3. Add cocoa powder, bicarbonate of soda and nutmeg to the dry ingredients
  4. Whisk briefly until combined then set aside
  5. Add unsalted butter, ginger and dark brown sugar to a clean large mixing bowl
  6. Cream together - medium speed
  7. Add molasses to the sugar mixture
  8. Mix until combined - medium speed
  9. Mix a clean large mixing bowl well - medium speed
  10. Add chocolate chips to the sugar mixture
  11. Mix large mixing bowl until combined - low speed
  12. Chill in fridge - 1 hr
  13. Pre-heat oven - 160°C
  14. Scoop baking sheets
  15. Sprinkle with granulated sugar
  16. Bake - 10 min, 160°C
  17. Transfer onto cooling rack
