The clafoutis, in the most traditional sense, features one of the prized fruits grown in the Limousin region: the black cherry. With the increased popularity of the recipe, however, chefs from outside Limousin have started creating their own variations of this traditional cake dessert. Suddenly, other fruits like pears, apples, plums, blackberries and more made their way as the feature fruit into these desserts.

Step preview

  1. Pre-heat oven - 200°C
  2. Add pastry flour, coconut sugar and sea salt to a clean large mixing bowl and mix
  3. Make a well
  4. Add milk and vanilla extract to the batter
  5. Whisk in until smooth
  6. Add egg to the batter one by one
  7. Whisk vigorously
  8. Add butter to the batter
  9. Mix thoroughly until combined
  10. Layer a clean glass baking dish with cherries
  11. Pour batter into glass baking dish
  12. Bake - 15 min, 200°C
  13. Bake - 30 min, 175°C
  14. Serve immediately
