Step preview

  1. Add aubergine and garlic clove to a clean medium bowl
  2. Mash with potato masher
  3. Add ground cumin, paprika, ground cinnamon, tahini, ground almonds and coriander to the medium bowl
  4. Mix until just combined
  5. use damp hands to form into 6 patties
  6. Add extra virgin olive oil to a clean frying pan
  7. Fry until golden brown - medium heat
  8. Serve
