Easy, versatile and gluten free. This is a very forgiving crispy loaf of bread. The recipe makes a soft loaf with a nice crust. Easily add any of your favourite things to this bread for a sweet or savoury alternative. Grated apple and cinnamon - yes please! Semi-sundried tomatoes and olive tapanade - mmm.

Step preview

  1. Pre-heat oven - 190°C
  2. Grease a clean loaf pan
  3. Add plain yogurt, egg and bicarbonate of soda to a clean medium bowl
  4. Blend until combined
  5. Add oats to the mixture
  6. Mix in until just combined
  7. Transfer mixture to loaf pan
  8. Bake until golden brown - 1 hr, 190°C
  9. Turn out on round wire rack
  10. Return to the Oven
  11. Bake until golden brown - 10 min, 190°C
