Where keshi yena gets much of its taste from is in the Caribbean-inspired spiced filling. Normally, you might have a filling that features some meats or shredded chicken (though in ours, you’ll see we went vegetarian), but really anything you have in the kitchen can work. That type of all-encompassing versatility is one of the real positives of this cheese casserole dish.

- 1 teaspoon

- Raisins
- 1 tablespoon

- Tomato
- 3

- Tomato purée
- 1 tablespoon

- Soy sauce
- 1 teaspoon

- Ketchup
- 1 tablespoon

- Egg
- 2

- Old gouda cheese
- 455 g

- Rustic french bread

Medium bowl

Step preview
- Heat a clean saucepan
- Add olive oil to the saucepan
- Heat - medium heat
- Add onion, garlic clove, green bell pepper and fresh chilli to the saucepan
- Cook until softened - approx 3 min
- Add fresh parsley, capers and raisins to the vegetables
- Stir well
- Mix in tomato and tomato purée to the vegetables
- Mix well
- Cook - approx 2 min
- Add soy sauce and ketchup to the vegetables
- Mix in until well combined
- Cook and turn off heat - approx 3 min
- Let cool
- Transfer vegetables to medium bowl
- Add egg to the filling
- Mix in
- Pre-heat oven - 175°C
- Prepare 6 clean small glass bowls
- Grease
- Line with old gouda cheese thoroughly
- Transfer filling to 6 cheese mixture
- Cover carefully
- Bake until golden brown - approx 45 min, 175°C
- Let cool onto cooling rack
- Transfer cheese mixture to serving plate
- Serve
- Serve with rustic french bread
