Step preview
- In a large microwave safe bowl, add the diced onions, thinly sliced garlic and olive oil
- Microwave for 4 mins to soften onions & garlic
- Remove onions and garlic from microwave and add the kale, rosemary, cumin, coriander, cayenne pepper, salt and some pepper. Mix well to combine
- Add in the lemon juice, white beans and 4 cups of water
- Cover bowl with clingfilm/microwave safe lid and microwave
- While stew is cooking prepare your toppings
- In a small bowl mix, mayo, lemon and crushed garlic
- Serve in a large bowl with a spoon of lemon garlic mayo and a generous sprinkle of toasted breadcrumbs
