Step preview

  1. In a large microwave safe bowl add onion slices and potato slices
  2. Cover potato and onion with olive oil until they are covered
  3. Cover bowl with a microwave safe plate or lid and transfer the bowl into the microwave for 12 mins or until potato is cooked through
  4. Carefully remove bowl from microwave as oil is very hot
  5. Place another bowl under a colander to catch the olive oil and drain the onions and potatoes
  6. Add the potatoes to a bowl and add a generous seasoning of salt, pepper and smoked paprika and fold in gently so as not to break up the potatoes
  7. In a separate bowl whisk the 8 eggs with some salt and pepper and add them to the potatoes
  8. Grease a wide large bowl with butter, add the egg and potato mix
  9. Place a microwave safe lid on the bowl and microwave until eggs have set
  10. Serve a slice with a sprinkle more smoked paprika and a simple salad
