Step preview
- In a microwave safe bowl add chickpea pasta, 1 block of frozen spinach and cover with boiling water
- Place bowl in the microwave and cook pasta
- While pasta is cooking, in a mixing bowl add diced cherry tomatoes, drained tuna, crushed garlic, lemon juice, chilli flakes, olive oil, salt and pepper
- When pasta is cooked, drain pasta and spinach and add warm pasta to the mixing bowl
- Mix pasta and spinach in well with the ingredients in the mixing bowl and enjoy straight away or cold for tomorrows lunch
