These quick granola bars are the perfect grab and go breakfast or snack. They take only 5 mins to prep and 10 mins to cook. Enjoy them as granola bars or break them up into granola pieces to have with your yogurt and fruit in the am. Store in an airtight container for up to 4 weeks

Step preview

  1. In a microwave safe bowl add coconut oil, tahini, vanilla, cinnamon, coconut sugar and maple syrup
  2. Microwave for 1 min to melt everything together
  3. Once melted add in, oats, nuts, seeds and desiccated coconut
  4. Mix well to combine
  5. Grease microwave safe dish with coconut oil
  6. Add the oat mix so it is roughly 1 inch thick and press firmly down in the baking tray
  7. Microwave on high for 6-8 mins
  8. Let cool, cut into bars with sharp knife or break into chunks for granola
