Step preview

  1. Pre-heat oven - 190°C
  2. Add bran cereal, cultured lowfat buttermilk, unsweetened applesauce, sugar substitute, egg, rapeseed oil and molasses to a clean medium bowl
  3. Mix until combined
  4. Set aside
  5. Add plain flour, baking powder and bicarbonate of soda to a clean large mixing bowl
  6. Mix until combined
  7. Transfer mixture to dry ingredients
  8. Mix slowly until combined
  9. Add blueberries to the dry ingredients
  10. Fold until combined
  11. Line a clean muffin pan with paper muffin cups
  12. Pour content of medium bowl into muffin pan
  13. Bake until skewer tests clean and let cool - 18 min
