Step preview

  1. Pre-heat oven - 175°C
  2. Grease a clean round pan
  3. Combine the milk and lemon juice in a medium bowl
  4. Whisk to combine, set aside for 10 minutes to make buttermilk
  5. Add plain flour, granulated sugar, baking powder, bicarbonate of soda and lemon to a clean large mixing bowl
  6. Add egg and grapeseed oil to the medium bowl
  7. Add buttermilk mixture to the flour
  8. Mix batter gently until just combined
  9. Pour batter into round pan
  10. Bake until skewer tests clean - 45 min, 175°C
  11. Add raspberries, granulated sugar, honey and sea salt to a clean saucepan
  12. Cook - 5 min, low heat
  13. Let cool completely
  14. Add crème fraîche to the frosting
  15. Remove cake from oven and cool on a wire rack for minimum 30 minutes
  16. Spread frosting evenly
  17. Top with raspberries
  18. Serve immediately
