Step preview
- Pat the chicken with paper towels to dry
- Sprinkle the chicken breasts with kosher salt, pepper, and a seasoning blend (e.g., Cajun or Creole, taco seasoning, Za'atar, herbes de Provence, etc)
- Place the trivet in the Instant Pot
- Add the chicken stock
- Close and lock the lid and turn the steam release handle to Sealing
- Select pressure cook (or manual), high pressure, and set the time for 10 minutes
- When the time is up, allow the pressure to release naturally for 10 minutes
- Then carefully turn the valve to the venting position to release the remaining pressure
- Meanwhile, preheat the broiler
- Line a baking pan with foil
- Place the cooked chicken on the prepared baking pan, skin side up
- Broil the chicken breasts for 4 to 6 minutes, or until the skin is browned
