Step preview

  1. Season both sides of chicken with salt and pepper
  2. Press Sauté
  3. Heat oil in Instant Pot
  4. Add chicken in batches; cook about 8 minutes or until browned on both sides
  5. Remove to plate
  6. Add onion and broth to pot
  7. Cook and stir 5 minutes or until onion is translucent; scraping up browned bits from bottom of pot
  8. Add ginger, garlic, cinnamon, allspice
  9. Cook - Sauté, Normal, 1 min or until fragrant
  10. Stir in tomatoes, apricots, remaining broth and saffron
  11. Mix well
  12. Return chicken to pot, pressing into liquid
  13. Close and lock the lid and turn the steam release handle to Sealing
  14. Press Manual; cook at high pressure 11 minutes
  15. Season with additional salt and pepper
  16. Garnish with parsley and serve
