Step preview
- Pre-heat oven - 160°C
- Grease a clean round pan
- Add ground almonds, plain flour, sea salt, baking powder and ground cinnamon to a clean medium bowl
- Whisk briefly then set aside
- Add egg, egg yolk, granulated sugar and vanilla extract to a clean large mixing bowl
- Beat until smooth - 3 min
- Transfer dry ingredients to batter
- Mix until combined
- Add unsalted butter to a clean small bowl
- Melt in microwave - low heat
- Mix content of small bowl into batter until combined
- Pour batter into round pan
- Add egg white to a clean medium bowl
- Beat lightly until frothy
- Add flaked almonds and granulated sugar to the topping
- Mix thoroughly
- Spread topping with cake
- Bake until skewer tests clean - 30 min, 160°C
- Let cool
