This rich creamy lemony dessert is so quick to put together and a firm favourite. You can also prep this the day before, so a great dessert to make for a dinner party

Step preview

  1. Add cream, zest, juice and sugar to a deep microwave-safe dish
  2. Mix to combine
  3. Microwave for 1.5 mins
  4. Using a spatula mix the cream mixture
  5. Microwave for a further 1.5 mins
  6. Mix the cream mixture again
  7. Microwave for 1.5 mins
  8. Mix for the final time
  9. Heat for final 1.5 mins
  10. Let the mixture cool slightly for 5 mins
  11. Pour the mixture into two small cocktail glasses or similar
  12. Pop in the fridge for 2-24 hours or until posset is set
  13. Serve with fresh raspberries on top
