This warming paneer spinach curry is our favourite for the colder months. Serve it with some cooked rice, naan bread and your favourite chutney for the perfect meal. Freeze any leftovers for later use

Step preview

  1. Add the defrosted spinach to a blender with salt and blend until smooth
  2. Set the blended spinach to the side until needed
  3. Add the diced onion and the olive oil to the Crispy Pot
  4. Place the lid on top and microwave on high for 3 mins
  5. Remove the lid from the Crispy Pot and add the garlic, ginger, diced chilli and spices and mix well
  6. Replace the lid and microwave on high for 2 mins
  7. Remove the lid, add the paneer cubes and mix well to get the paneer coated in the spices
  8. Replace the lid and microwave on high for 2 mins
  9. Remove the lid and add the blended spinach and coconut milk
  10. Mix well to combine and replace the lid of the Crispy Pot
  11. Microwave on high for 12 mins
  12. Taste and season if needed
  13. Serve with some cooked rice and optional naan bread
