Step preview

  1. Add fresh chilli, garlic clove, lemongrass stalk, fish sauce, brown sugar, salt, scallion and ginger to a clean food processor bowl
  2. Pulse until well combined - high speed
  3. Add salmon fillet to the food processor bowl
  4. Pulse briefly until just combined - high speed
  5. Add coriander and kaffir lime leaves to the food processor bowl
  6. Pulse until combined - high speed
  7. Form into balls
  8. Chill in fridge until firm - approx 30 min
  9. Assemble
  10. Grill - 2 min
