These are a South African pastry, deep fried and dunked in sugar syrup. Basically South Africa's answer to the doughnut, but dunked in a glaze. (It may make more than 20 that was just a guestimate)

- Caster sugar
- 410 g

- 1 ¼ teaspoons

- 240 ml

- Plain flour
- 195 g

- Cornflour
- 100 g

- Baking powder
- 2 ½ teaspoons

- Sea salt
- ¾ teaspoon

- Caster sugar
- 2 tablespoons

- Milk
- 120 ml

- Egg
- 1

- Unsalted butter
- 25 g

- Vegetable oil
- as needed

Step preview
- Add caster sugar, cream of tartar, ginger, lemon juice, water and cinnamon stick to a clean large saucepan
- Boil until bubbles form
- Simmer - 10 min, low heat
- Let cool
- Refrigerate
- Add plain flour, cornflour, baking powder, sea salt, caster sugar, milk, egg and unsalted butter to a clean large mixing bowl
- Knead until mixture comes together and cover
- Refrigerate - 30 min
- Roll out until 1 cm thick
- Roll into balls
- Add vegetable oil to a clean saucepan
- Fry one by one until golden brown then set aside
- Drizzle
- Let cool
