Step preview

  1. Add oil to the inner pot
  2. Pre-heat the inner pot using Sauté, Low
  3. When the inner pot is hot add the curry paste and cook mixing for 1.5 mins
  4. Add the coconut milk and spices and mix well
  5. Add the tamarind, sugar, fish sauce, onions, potatoes and water. Mix to combine
  6. Secure the lid onto the Instant Pot Pro Plus
  7. Pressure cook on Max for 4 mins. Allow for Natural release for 10 mins and then quick release the remaining pressure
  8. Carefully remove the lid
  9. Mix in the tofu and peanut butter
  10. Sauté for 1 min or until tofu has heated
  11. Serve with cooked rice, crispy onions and optional cilantro
