10-Minute Crispy Breakfast Potatoes

Step preview

  1. Wrap each potato in 1 very wet paper towel
  2. Microwave all 4 potatoes together on high for 4 minutes, adding time (if needed) until they're soft enough to give with a poke
  3. Let cool to touch
  4. Melt the butter in a large skillet
  5. Using the back of a spatula or large spoon, smash the potatoes until they're about 1/2-inch thick
  6. Season liberally with the blend of your choice
  7. Pan sear for about 2 minutes, or until crispy looking
  8. Flip to cook the other side for the same amount of time
  9. Add more seasoning, if desired
  10. Garnish with the chives and enjoy warm!
