These are dense, chocolatey, and more cake-like than any flourless dessert I’ve ever made. They were fabulous! Throw on some frosting, and you have a pretty darn delicious dessert. If you’re dairy free too, just substitute your butter replacement and it should work just fine!

Step preview

  1. Pre-heat oven - 190°C
  2. Add semisweet chocolate and unsalted butter to a clean large mixing bowl
  3. Heat until completely melted - 30 sec, medium-high heat
  4. Whisk together until blended
  5. Add brown sugar, salt and egg to the large mixing bowl
  6. Add cocoa powder and coffee powder to the large mixing bowl
  7. Prepare a clean mini muffin pan with paper muffin cups
  8. Transfer content of large mixing bowl to mini muffin pan
  9. Bake until just set - 15 min, 190°C
  10. Transfer onto cooling rack until completely cool
  11. Add cream cheese and unsalted butter to a clean stand mixer bowl
  12. Mix until light and fluffy - medium-low speed
  13. Add cocoa powder, powdered sugar and vanilla extract to the stand mixer bowl
  14. Mix until smooth - medium-low speed
  15. Frost with piping bag
