Step preview

  1. Line a clean square pan with parchment paper
  2. Add black peppercorns, coriander seeds and cloves to a clean cast iron skillet
  3. Toast until fragrant - 1 min, low heat
  4. Grind with mortar and pestle until fine
  5. Add orange then set aside
  6. Add condensed milk, milk, granulated sugar and salted butter to a clean large saucepan
  7. Simmer until soft ball stage (118ºC/235ºF) while mixing - 10 min, low heat
  8. Transfer
  9. Beat until smooth - 5 min
  10. Transfer square pan
  11. Let cool until set
  12. Cut into squares
