As a child this shepherds pie was a weekly family meal. This recipe is a quick no fuss version that can be whipped up for all to enjoy. Fluffy potatoes on top with a gravy mince on the bottom, a comforting meal in one dish

Step preview

  1. To a microwave-safe dish add the peeled and quartered potatoes
  2. Add an inch of cold water to the dish and cover the dish with microwave-safe plastic wrap or a microwave-safe plate
  3. Microwave on High for 8 mins or until the potatoes are cooked through
  4. Drain the cooked potatoes and add them to a mixing bowl
  5. Add the butter, milk, salt and pepper to the potatoes
  6. Using a potato masher or fork mash everything together until just combined
  7. Taste here for seasoning and add more salt and pepper if needed
  8. Leave the mashed potatoes to the side
  9. To a 6-7 inch microwave-safe baking dish, add the onions, oil and salt
  10. Microwave on High for 2 mins to soften the onions
  11. Add the ground mince and crushed garlic. Mix to combine
  12. Microwave on High for 2 mins
  13. Mix with a fork to break up any large pieces of mince and microwave on High for 2 more mins
  14. Disolve the stock cube in hot water and add to the mince meat
  15. Add the peas and optional red wine and mix to combine
  16. Add the potatoes in a layer onto the mince and gravy mixture and using a fork scrape the top of the mixture
  17. Prepare the wire rack and place the dish on top
  18. Broil here for 10 mins
  19. Let rest for 5 mins and serve
