A delicious vegetable dish for all the family to enjoy as a side dish, mixed in with pasta or served as a main with some rice or potatoes. This recipe uses both a small eggplant and zucchini but if you can only find large ones add extra olive oil and follow the recipe the same

Step preview

  1. Add the olive oil to a small bowl and mix in the crushed garlic
  2. Add the cut vegetables to the enamel tray
  3. Add the salt and garlic oil and using your clean hands mix well to get a light coating of oil on each veg piece
  4. Place the enamel tray onto wire rack
  5. Cook on Combo 1 for 20 mins
  6. Stir well
  7. Cook for a further 10 mins on Combo 1
  8. Stir and cook for 10 more mins on Combo 1
  9. Tear some fresh basil and add to the cooked veg and serve warm or cold
