Delicious Chicken Drumsticks for all the family to enjoy. Served with a peanut lime mayo and cooked rice or a light salad. We use small-medium sized chicken drumsticks but if yours are larger add an extra 2-8 mins or until they are cooked through

Step preview

  1. To a large bowl add the peanut butter, sesame oil, soy sauce, maple syrup, sriracha and lime juice
  2. Mix together to combine
  3. Add the chicken drumsticks to the sauce and mix well to get a coating of the peanut sauce all over each drumstick
  4. Place the wire rack onto the enamel tray and place the air fryer basket on top of the wire rack
  5. Add the drumsticks to the air fryer basket and reserve any marinade that is left in the mixing bowl
  6. Air fry for 15 mins
  7. Turn each drumstick and using a pastry brush add any remaining marinade to each drumstick
  8. Air fry for a further 12 mins or until the largest drumstick is cooked through
  9. Let the drumsticks rest for 5 mins and make the mayonnaise sauce
  10. To a small bowl add the peanut butter, soy sauce, maple syrup, sesame oil, mayonnaise, sriracha , lime juice and water
  11. Whisk here to combine and taste for seasoning
  12. Serve the drumsticks with cooked rice, a drizzle of the mayonnaise sauce and some crushed peanuts
