Step preview

  1. Add the chicken thighs to a large mixing bowl
  2. Add the oil, curry powder, mango chutney and salt
  3. Mix well to get a coating of marinade on each chicken thigh
  4. Prepare the enamel tray and wire rack and place the air fryer basket on top
  5. Add the chicken thighs to the air fryer basket
  6. Air fry for 12 mins
  7. Turn each chicken thigh
  8. Air fry for a further 13 mins
  9. Test one thigh to make sure it is cooked all the way through if not cook for further 1-2 mins
  10. Once thighs are cooked Let rest for 5 mins while you prepare your mayonnaise
  11. In a small bowl combine the mayo, mango chutney and curry powder
  12. To a toasted bun add the mango mayo, the chicken thigh and some avocado
