Step preview

  1. Add olive oil to a clean stockpot
  2. Heat - medium-high heat
  3. Add onion and carrot to the stockpot
  4. Sauté until softened while stirring occasionally - 5 min
  5. Add garlic clove to the stockpot
  6. Sauté until fragrant while stirring occasionally - 1 min
  7. Add vegetable stock, red lentils, sweetcorn kernels, ground cumin, curry powder, saffron and cayenne pepper to the stockpot
  8. Stir until combined
  9. Cook until simmering and cover
  10. Cook until tender while stirring occasionally - 15 min
  11. Purée carefully with stick blender until smooth
  12. Mix in lemon to the stockpot
  13. Season with salt & pepper to taste
  14. Serve immediately
  15. Garnish with dill, hemp seeds and chilli flakes
