- Pork fillet
- 4

- Salt
- 2 tablespoons

- Double cream
- 200 ml

- Butter
- 50 g

- Salt & pepper
- 1 pinch

- Fresh thyme
- 1 pinch

Step preview
- Add lemon zest, fresh thyme, olive oil, garlic clove and black pepper to a clean small bowl
- Mix together until combined
- Mix pork fillet into the pork then set aside
- Add water, potato and salt to a clean large saucepan
- Cook until soft - approx 20 min
- Drain
- Mash with potato masher
- Add double cream, butter and salt & pepper to the potatoes
- Mash with potato masher
- Transfer pork to frying pan
- Cook evenly until golden brown - approx 5 min
- Remove and let cool - approx 2 min
- Transfer pork to 4 serving plates
- Transfer potatoes to 4 serving plates
- Garnish with fresh thyme
- Serve immediately
