This is a real treat when you fancy a hassle-free stew. Because the fish cooks in minutes, you could easily make the zesty sauce in advance and heat it back up to add the fish. Use a combination of your favourite types of fish and serve with couscous.

Step preview

  1. Add olive oil, celery stalk, garlic clove, onion and courgette to a clean frying pan
  2. Cook until soft - approx 5 min, medium heat
  3. Add paprika to the stew
  4. Stir - 1 min, medium heat
  5. Add dry white wine to the stew
  6. Simmer - medium-low heat
  7. Add tinned chopped tomatoes to the stew
  8. Simmer - 5 min, medium-low heat
  9. Add tinned chickpeas, lemon zest and vegetable stock to the stew
  10. Season with salt & pepper to taste
  11. Simmer until thickened - medium-low heat
  12. Add cod fillet to the stew
  13. Simmer until flaky - 5 min, medium-low heat
  14. Add couscous and water to a clean saucepan
  15. Cover until just cooked then fluff with a fork - medium-high heat
  16. Spoon couscous into medium bowl
  17. Transfer stew to medium bowl
  18. Garnish with fresh parsley
  19. Serve immediately
