- 250 g

- Add mint leaves, white wine vinegar, olive oil and honey to a clean small bowl
- Whisk
- Mix in orange to the dressing
- Add salt & pepper to the dressing then set aside
- Get a clean frying pan
- Heat - medium-high heat
- Add pine nuts to the frying pan
- Fry until golden brown while stirring occasionally - approx 2 min
- Transfer nuts to plate
- Heat Barbecue - high heat
- Slice halloumi into a clean work surface evenly
- Grill each side until golden brown - approx 2 min
- Add watercress and baby spinach to a clean large serving bowl
- Serve
- Drizzle salad with dressing
- Sprinkle with toasted pine nuts
