Everyone loves a tasty loaded baked potato, and sweet potatoes take this family-favourite to a new, more grown-up level. Caramelized onions take time and patience to get right, but the results are worth it.

Step preview

  1. Pre-heat oven - 220°C
  2. Add sweet potato to a clean work surface
  3. Prick
  4. Bake until soft - 45 min, 220°C
  5. Add vegetable oil, onion, white wine, white wine vinegar, dried thyme and brown sugar to a clean frying pan
  6. Cook slowly in frying pan until caramelized - approx 30 min, low heat
  7. Transfer potatoes to baking sheet
  8. Slice half
  9. Transfer onions to baking sheet
  10. Top with brie
  11. Sprinkle with dried thyme
  12. Bake until browned - approx 5 min, 220°C
  13. Season with salt & pepper
  14. Garnish with fresh parsley
  15. Serve immediately
