I had my first hopper and coconut sambal when visiting Sri Lanka. Hoppers are a Sri Lankan staple often eaten with an egg inside for breakfast.

Ingredients

Step preview

  1. Add dried yeast, water and sugar to a clean small bowl
  2. Stir with tablespoon then set aside
  3. Let rest - approx 15 min
  4. Add rice flour to a clean medium bowl
  5. Transfer content of small bowl to medium bowl
  6. Stir until combined
  7. Add coconut milk to the medium bowl
  8. Mix until thick
  9. Add coconut milk to the medium bowl bit by bit while stirring occasionally
  10. Stir until thickened
  11. Let rest - 30 min
  12. Add salt to the medium bowl
  13. Pre-heat a clean frying pan
  14. Stir medium bowl
  15. Transfer content of medium bowl to frying pan bit by bit
  16. Swirl
  17. Cover until light golden - approx 3 min
  18. Remove
  19. Serve
