When you picture apple cake, it's usually a sliced apple pie or a sturdy carrot cake-like loaf. This super moist cake uses homemade applesauce for an incredibly tender finish, gently spiced with cinnamon and ginger. The frosting may be my favorite part of the whole cake, adding sweetness without being overpowering. This one-bowl recipe is suitable for newbie and experienced bakers alike.

Step preview

  1. Pre-heat oven - 180°C
  2. Line in cake tin then set aside
  3. Grease
  4. Add plain flour, ground cinnamon, ground ginger, kosher salt and bicarbonate of soda to a clean large mixing bowl
  5. Mix gently until combined and continue
  6. Add egg, granulated sugar, buttermilk, applesauce and rapeseed oil to the large mixing bowl
  7. Whisk gently until combined then scrape bowl
  8. Whisk carefully until completely mixed
  9. Transfer content of large mixing bowl to springform pan
  10. Bake - 55 min, 180°C
  11. Get
  12. Add cream cheese, sour cream and maple syrup to the springform pan
  13. Blend vigorously until smooth
  14. Remove from the oven
  15. Let cool on round wire rack
  16. Remove
  17. Frost generously
  18. Serve
