I discovered this simple but delicious recipe whilst on holiday on the island of Hvar in Croatia. I used hake fillets but use any seafood you like. Serve with a glass of good white wine and some crusty bread. Sea view optional.

- 240 ml

- White wine
- 240 ml

- White vinegar
- 1 tablespoon

- Vegetable stock
- 240 ml

Step preview
- Add cod fillet to a clean cutting board
- Season with salt & pepper
- Add olive oil to a clean large saucepan
- Heat thoroughly
- Add onion and garlic clove to the large saucepan
- Cook while stirring occasionally - 5 min, medium-high heat
- Add tomato to the large saucepan
- Cook while stirring occasionally - 2 min
- Add salt & pepper to the large saucepan to taste
- Add potato, fresh parsley, lemon, white wine, white vinegar and vegetable stock to the large saucepan
- Simmer - 20 min
- Transfer fish to large saucepan carefully and cover
- Simmer gently - 10 min
- Serve carefully
- Garnish with fresh parsley
