Step preview
- Add bread flour, quick-rise yeast, granulated sugar, sea salt, milk, vanilla extract and egg yolk to a clean stand mixer bowl
- Mix until smooth - medium speed
- Add bread flour and unsalted butter to the dough
- Mix until completely mixed and cover - medium speed
- Let rise until doubled - 1 hr
- Add unsalted butter to a clean frying pan
- Heat until melted - medium-high heat
- Add apple, granulated sugar, ground cinnamon and sea salt to the frying pan
- Cook until syrupy and let cool - approx 10 min, medium heat
- Transfer dough to lightly floured surface
- Roll out
- Transfer content of frying pan to dough
- Fold halfway
- Chop
- Form into a log
- Flour
- Cut until 1" thick
- Cover with parchment paper
- Transfer dough to baking sheet
- Let rise until fluffy - approx 20 min
- Add powdered sugar, maple syrup and vanilla extract to a clean medium bowl
- Stir until smooth
- Add water to the medium bowl
- Stir then set aside
- Add frying oil to a clean fryer
- Heat - 175°C, medium-high heat
- Transfer content of baking sheet to fryer
- Fry until golden brown and let cool - 175°C, medium-high heat
- Dip and let cool
