Congee is a savory rice porridge that’s especially popular in East Asia. This recipe is for a basic ginger congee topped with broccolini, but for a more traditional version feel free to use gai-lan. A very fragrant and economical meal that will feed a crowd. This creates a "blank slate" and you are free to add anything you like to make it your own. Suggested toppings are soft boiled eggs, crushed peanuts, sauteed or steamed shrimp, crispy shallots, bean shoots, tofu cubes, soy sauce, shredded chicken or pork, coriander, chili flakes, dumplings... the list goes on!
