Step preview
- Pre-heat oven - 160°C
- Line a clean baking tray with parchment paper
- Place speck or bacon onto a lined baking tray and dust liberally with the paprika
- Bake 30 minutes until very crisp. Cool
- Place eggs into simmering basket and insert into Thermomix bowl
- Add water to the TM5 bowl
- Steam for 15 min, 100°C, speed 4
- Remove from basket, drain bowl, cool and peel eggs
- Add scallion, fresh parsley and garlic clove to the TM5 bowl
- Chop with MC in place 3 sec, speed 5
- Add peeled eggs, some of the bacon, in pieces
- Blend with MC in place 10 sec, speed 8
- Scrape down sides of TM5 bowl
- Add crème fraîche to the TM5 bowl
- Blend with MC in place 10 sec, speed 10
- Then season with salt & pepper
- Garnish with remaining pieces of bacon and serve
