- Pre-heat oven - 175°C
- Grease 2 clean loaf pans
- Add plain flour, bicarbonate of soda, baking powder and salt to a clean large mixing bowl
- Mix in walnuts to the dry ingredients
- Add egg, plain yogurt and olive oil to a clean large mixing bowl
- Whisk together
- Add sugar, fresh rosemary, courgette, lemon and lemon to the batter
- Mix carefully until combined
- Transfer dry ingredients to batter
- Mix until well combined
- Transfer batter to 2 loaf pans
- Bake until skewer tests clean - 1 hr, 175°C
- Cool - 10 min
- Transfer onto cooling rack
