Step preview

  1. Pre-heat oven - 180°C
  2. Add port to a clean large saucepan
  3. Heat - high heat
  4. Add coconut sugar to the mixture
  5. Boil until liquid has evaporated
  6. Add orange to a clean blender jug
  7. Blitz until well blended
  8. Transfer content of blender jug to mixture
  9. Add sultanas, dried cranberries, ground ginger, ground cinnamon and ground cloves to the mixture
  10. Cook until thickened - 20 min
  11. Add sweet shortcrust pastry to a clean work surface
  12. Cut out into a circle
  13. Line a clean cupcake pan
  14. Arrange pastry in cupcake pan
  15. Bake - 20 min, 180°C
  16. Sprinkle with icing sugar
  17. Serve
