Step preview

  1. Heat a clean frying pan - medium heat
  2. Fry gently - 5 min, medium heat
  3. Add olive oil, baby potato and onion to the frying pan
  4. Cook gently until tender - 15 min, medium heat
  5. Add egg, fresh basil leaves and salt & pepper to a clean medium bowl
  6. Beat until well combined
  7. Transfer asparagus back to the pan and mix evenly
  8. Reduce frying pan - low heat
  9. Cover with foil
  10. Cook until just set - 10 min, low heat
  11. Flip
  12. Cook until firm - 3 min, low heat
  13. Serve
