  1. Add garlic clove, dried chillies, sea salt, ground turmeric, lemongrass stalk and shrimp paste to a clean food processor bowl
  2. Blend until smooth - medium speed
  3. Add fish sauce to a clean large saucepan
  4. Add caster sugar, lemongrass stalk and water to the large saucepan
  5. Boil gently - medium-high heat
  6. Simmer gently - 8 min, medium-low heat
  7. Add lemon juice, tamarind paste and water to a clean small bowl
