Step preview

  1. Add ground sumac, fresh thyme, lemon and olive oil to a clean medium bowl
  2. Mix
  3. Season to taste
  4. Add chicken thighs to the medium bowl
  5. Rub in until coated then set aside
  6. Heat a clean medium cast iron skillet
  7. Add pita bread to the medium cast iron skillet
  8. Cook until lightly browned then set aside - approx 4 min
  9. Transfer the ground sumac mixture to medium cast iron skillet
  10. Cook until cooked through then set aside - approx 10 min
  11. Squeeze lemon into the medium cast iron skillet
  12. Transfer content of medium cast iron skillet to serving plate
  13. Add hummus to the serving plate
  14. Serve with rocket
