Step preview

  1. Add chicken stock, chilli sauce, fish sauce, dark soy sauce, rice wine vinegar and mirin to a clean large saucepan
  2. Boil - medium-high heat
  3. Reduce until simmering - medium-low heat
  4. Add chicken breast to the soup
  5. Cook until cooked through - 15 min, low heat
  6. Cut
  7. Add noodles and pak choi to the soup
  8. Cook until tender - 2 min, low heat
  9. Prepare 4 clean large serving bowls
  10. Arrange bean sprout in the large serving bowls
  11. Sprinkle with fresh chilli
  12. Garnish with coriander and lime
  13. Serve
