Step preview

  1. Pre-heat in grill - high heat
  2. Add garlic clove, shallot, lemongrass stalk, ground turmeric, fresh chilli, ground ginger and salt & pepper to a clean food processor bowl
  3. Process
  4. Add peanut oil and fish sauce to the spices
  5. Process until thickened while machine is running
  6. Transfer spices to medium bowl
  7. Add fish fillet to the fish
  8. Toss and cover
  9. Refrigerate in fridge - 15 min
  10. Arrange
  11. Line a clean baking pan with foil
  12. Transfer fish to baking pan
  13. Broil evenly in grill until browned - high heat
  14. Sprinkle with coriander
  15. Serve
