Fragrant with garam masala, ground coriander and warming ginger, this thick, flavorful curry is slow cooked to make the most out of tender lamb.

- Lamb neck fillet

- 2 tablespoons

- Tinned chopped tomatoes
- 370 g

- Lamb stock
- 300 ml

- Heavy cream
- 60 ml

- Ground coriander
- 2 teaspoons

- Get a clean slow cooker bowl
- Add butter to a clean medium cast iron skillet
- Heat
- Add lamb neck fillet to the medium cast iron skillet
- Fry until browned while stirring occasionally - high heat
- Lift with slotted spoon
- Get slow cooker bowl
- Transfer content of medium cast iron skillet to slow cooker bowl
- Add onion to the medium cast iron skillet
- Fry until softened while stirring occasionally - 5 min
- Stir in garlic clove, ginger, garam masala, ground turmeric, fresh chilli and cumin seeds to the medium cast iron skillet
- Cook - 1 min
- Mix in plain flour to the medium cast iron skillet
- Add tinned chopped tomatoes and lamb stock to the medium cast iron skillet
- Boil while stirring occasionally
- Retrieve slow cooker bowl
- Pour content of medium cast iron skillet into slow cooker bowl and cover
- Cook until tender - 10 hr
- Stir in heavy cream to the slow cooker bowl
- Garnish with coriander, ground coriander and red onion
