Turn your favorite vegetarian sausages into a warming veggie hotpot. Packed with mushrooms, lentils and sweet tomatoes and topped with crunchy slices of garlic ciabatta, this stew is utterly satisfying and delicious.

Step preview

  1. Add butter and olive oil to a clean Dutch oven
  2. Melt
  3. Add Vegetarian Sausage, button mushroom and red onion to the Dutch oven
  4. Fry until lightly browned
  5. Add tomato purée, puy lentils, vegetable stock and dried oregano to the Dutch oven
  6. Boil
  7. Reduce heat and cover
  8. Cook gently until tender - 20 min
  9. Add cherry tomatoes to the Dutch oven
  10. Cook - 5 min
  11. Pre-heat in grill - medium heat
  12. Add garlic clove, butter and fresh parsley to a clean medium bowl
  13. Mix
  14. Add ciabatta to a clean plate
  15. Transfer butter to bread
  16. Arrange bread in Dutch oven on top
  17. Broil in grill until toasted - 5 min, medium heat
  18. Serve
