  1. Heat vegetable oil to a clean large saucepan
  2. Add red onion to the large saucepan
  3. Sauté until lightly browned - 5 min
  4. Stir in curry paste, tinned chopped tomatoes, tinned chickpeas, vegetable stock and light brown sugar to the large saucepan
  5. Boil then reduce heat
  6. Cover
  7. Simmer gently - 20 min
  8. Stir in kale to the large saucepan
  9. Cook gently - 10 min
  10. Season with salt & pepper
  11. Serve
