  1. Heat a clean medium cast iron skillet - medium heat
  2. Add aubergine and olive oil to the medium cast iron skillet
  3. Fry until softened - medium heat
  4. Transfer a clean plate
  5. Add olive oil and onion to the medium cast iron skillet
  6. Fry until softened - 5 min, medium heat
  7. Stir in garlic clove, smoked paprika and ground cumin to the medium cast iron skillet
  8. Cook - 1 min, medium heat
  9. Stir in red lentils and tinned chopped tomatoes to the medium cast iron skillet
  10. Add salt & pepper to the medium cast iron skillet
  11. None
  12. Transfer a clean slow cooker bowl
  13. Stir in vegetable stock to the slow cooker bowl and cover
  14. Cook in slow cooker - 8 hr, low heat

  16. Add coriander
