Layers of sweet orange and custardy vanilla make up this refreshing summery dessert. It's based on a retro Mexican favorite called "gelatina de leche."

Step preview

  1. Add egg yolk, white sugar, milk and vanilla bean paste to the TM bowl
  2. Cook - 8 min, 80°C, speed 4
  3. Add gelatine and water to a clean small bowl
  4. Stir with tablespoon
  5. Transfer gelatin to TM bowl
  6. Blend with MC on - 20 sec, speed 6
  7. Pour into 8-10 small drinking glasses up to less than halfway
  8. Refrigerate until completely set, 2-3 hours
  9. To make the Orange Jelly, place half the orange juice, sugar and lemon juice into Thermomix bowl
  10. Cook with MC in place - 8 min, 80°C, speed 2
  11. Add gelatine and water to a clean small bowl
  12. Stir with tablespoon
  13. Transfer gelatin to TM bowl
  14. Blend - 20 sec, speed 6
  15. Add the remaining orange juice
  16. Stir gently to combine - 4 sec, speed 3
  17. Strain mixture and pour Orange Jelly carefully onto the Vanilla Milk Jelly
  18. Allow to set completely (2-3 hours) in the refrigerator before serving
