This sweet Horchata is a refreshing dairy-free milky drink with a base of rice and cashew nuts. It's a traditional Mexican beverage with a hint of cinnamon that makes a great stand-in for a dairy-free smoothie or milkshake. Just soak rice and nuts overnight, then blend up in the morning. Serve over ice with a fruity garnish.

Step preview

  1. Soak rice and cashew nuts in water overnight or minimum 8 hours
  2. Place liquid rice, nut mixture, sesame seeds, sugar, cinnamon stick and extra water into Thermomix bowl
  3. Blend with MC on - 2 min, speed 9
  4. Scrape down sides of TM5 bowl
  5. Blend with MC on - 30 sec, speed 9
  6. Scrape down sides of TM5 bowl
  7. Strain through nut milk bag and serve over the frozen fruit chunks of choice
  8. Serve over the frozen fruit chunks of choice
